Jumping for Cauliflower

Whitsons’ Chef Sandmann is tossing up some Buffalo Cauliflower for this month’s Harvest of the Month summer recipe in our video above!

It is officially summertime, which means that cauliflower is now in season. There are plenty of nutrients present in this vegetable! The first one is Vitamin C, which promotes skin and brain health and prevents us from becoming sick. It is also necessary for the growth and repair of tissues in all parts of the body. Lastly, this vitamin helps in keeping your bones and teeth healthy, as well as increases the absorption of iron. Cauliflower also contains folate, vitamin K and potassium, which also helps to keep us healthy.

RECIPE: Cauliflower Pizza Bites

INGREDIENTS:
4 cups riced cauliflower or 1 medium size head of cauliflower
1 ¼ cup mozzarella cheese shredded
¼ tsp. dried oregano
¼ tsp. dried basil
¼ tsp. garlic powder
¼ tsp. salt
1 egg lightly beaten
Optional toppings, such as cheese, marinara sauce, vegetables and meat

 

DIRECTIONS:

  1. Preheat oven to 425 degrees. Place riced cauliflower on a microwave safe plate or bowl and cook on high in the microwave for 3-4 minutes. Spread hot cauliflower rice out on a clean dish rag and allow to cool. Fold sides of dish rag over the top of the rice and press to remove additional moisture. The more moisture that is removed, the crispier the crust will be. (If using frozen cauliflower rice, let defrost in fridge overnight and skip this step).
     
  2. Add cauliflower rice to bowl and add oregano, basil, garlic powder, salt and cheese and stir to combine. Stir in egg. Use hands to compress mixture into two or three dough balls. The balls will not be as firm as traditional dough but should hold their shape.
     
  3. Place dough on a baking sheet covered with coated parchment paper to prevent sticking. Press the dough into desired shape, pressing down to flatten the surface into an even layer, moving in the sides as needed. Ideally, the thickness should be about ¼ of an inch. Bake for 8-10 minutes or until the bottom of the crust just begin to brown.
     
  4. Remove from oven and top as desired. Return to the oven and bake for about 3-4 minutes more. Remove from oven and allow pizza to cool for about 5 minutes. Cut into squares or slices and enjoy!
